We are WAY overdue for a post on chocolate! So here it is…
The beautiful chocolates in our header image are from Wiseman House, and we can’t sing their praises highly enough. They are created by Kevin and LaDonne Wenzel in Hico, Texas. The Wiseman House philosophy is “simplicity” in the way they handmake their fine chocolates – with real chocolate and fresh ingredients. Read more about their story here.
Wiseman House chocolates have been sold in our store practically from the beginning, and they’ve always been a customer favorite! We have some regulars who come in each week for a bag of the almond toffee, and I can’t say I blame them!
When you’re in Dallas, come by Paper & Chocolate to pick some up. For those of you outside north Texas, you can purchase them online at wisemanhousechocolates.com and follow them on Twitter!
If we have to pick (and we normally don’t!), some of our favorites include:
- Almond Toffee: a delicious blend of roasted almonds stirred by hand into buttery toffee, then covered in milk chocolate with a ground almond crust.
- The Wild Woman Truffle: Belgian dark chocolate ganache dipped in dark chocolate then hand-drizzled with dark chocolate for decoration.
- Southern Hospitality Truffle: Milk chocolate ganache flavored with Jack Daniel’s whiskey, then dipped in milk chocolate. Dusted with turbinado sugar.
- Love Potion Truffle: Dark Belgian chocolate ganache flavored w/ cinnamon and chipotle pepper. Dipped in milk chocolate, and marked with 24 karat gold.

The Southern Hospitality truffle might be my favorite piece of chocolate ever, and I certainly have had enough chocolate to make that a very meaningful statement. DELICIOUS!
Of course, I could go for some toffee (right now!) too. Thanks so much for bringing Hico to Dallas.
